It took some doing to upload this image from my new computer, but here we are with a new post about a delicious raw food breakfast that is made using chia seeds–remember those chia pets? Well, Chia seeds are actually great to eat as well and easy to prepare. You can soak them for an hour or longer in almond milk or coconut water, or fruit juice and have a thick creamy pudding that is both delicious and easy to digest. It’s good for maintaining glycemic balance. I soaked the seeds in almond milk (stirring periodically) for a couple of hours, sprinkled on some homemade buckwheat granola and added fresh blackberries and a bit of agave syrup for a sweet taste, along with a dash of cinnamon.
